2-Ingredient Chocolate Mousse

Sometimes the best recipes are the ones that are barely recipes. Case in point: This two-ingredient chocolate mousse that feels unbelievably easy. You simply blend up a block of silken tofu (yes, tofu!) with melted bittersweet chocolate and a pinch of salt. That’s it. Feel free to top the mousse with whatever adornments you like: a few fresh raspberries, a dollop of yogurt, or a cloud of whipped cream. But truthfully, it's plenty good on its own.

Preparation

  1. Step 1

    Microwave 10 oz. bittersweet chocolate chips in a large microwave-safe bowl on high in 30-second bursts, stirring after each, until melted, about 1 minute total. Set aside.

    Step 2

    Blend one 16-oz. block silken tofu in a blender on high speed until smooth. Add a pinch of kosher salt and reserved melted chocolate and blend, starting on low speed and gradually increasing to high, until mixture is fluffy and smooth. (Stop as soon as mixture is smooth and fluffy. If you blend it too long, it can deflate.)

    Step 3

    Divide mousse among 4 bowls. Cover loosely with plastic and chill until set, at least 1 hour and up to 12 hours. Top with fresh berries, whipped cream, and/or other toppings of choice if desired.
